Ever wonder how bakeries achieve beautifully uniformed shaped cookies, cupcakes, muffins etc? Easy... we use professional grade cookie/ice cream scoopers. My personal favorites are high quality -food grade - stainless steel scoopers with the handle, scraper, spring and gear mechanism that when pressed rotates the food product 180 degrees releasing it into a perfectly shaped ball.
Aside from uniformity there are many other reasons we use this method such as the ability to mass produce which cuts down on labor and time cost making this an extremely cost effective choice. As well as allows pricing your products much easier because of the scoops are measured by ounces. As previously mentioned, scoopers are offered in a variety of sizes. The more three sizes that I use in my bakery are as follows:
Small cookie scoop,#50 scoop,1.5 Tablespoon/0.8 oz (scoop diameter: 1.6 inch/4 cm)
Medium cookie scoop,#24 scoop,2.8 Tablespoon/1.4 oz (scoop diameter: 2 inch/5 cm)
Large cookie scoop, #12 scoop, 5.4 Tablespoon/2.7 oz (scoop diameter: 2.4 inch/6 cm)
